I'm a Bombella

I have been MIA but for good reason...



I am MARRIED!  I am now, Mrs. Bombella :)

We had a fabulous wedding weekend and I could not have asked for more.  We had hands down the best weather I have ever had in Florida during that time.  I am pretty sure someone was looking out for us.  We rang in the New Year with all of our favorite people (minus a few) around us and serioulsy had the time of our lives!

I hope to get back being a regular blogger again now that one of my major "to-do's" has been crossed off my list!

I am heading off this week for work so I will leave you with a couple more preview pictures...Happy Be-lated New Years!

it's starting to feel real...

Matt and I will be running the Marine Corp Marathon on Sunday.  I guess we have known about it for a long time, but it hasn't really sunk in that we will really be running 26.2 miles in 2 days until now.  This will be my second marathon and Matt's first.  I am SO excited to be able to be with Matt when he crosses the finish line.  I know we will be exhausted and in pain but I can only picture big smiles and lots of relief!

I have been nursing some injuries the past couple weeks so my training kind of has taken a backseat.  I have super tight IT bands so I have gone to a Physical Therapist a couple of times to stretch them out.  Of course now that I am getting treatment on them my knee starts hurting!  I think these injuries have been a long time coming and I just want to get through the race on Sunday and take some time off...of running.  I can't afford to not work out at all, 2 MONTHS UNTIL THE WEDDING! :)

We haven't been up to too much in the past couple of months.  Just working, training and getting ready for the wedding.  We have squeezed in a little bit of fun though:



Matt has become a huge Washington Capitals fan so we have either been watching the game at home or been lucky enough to go to a game!  We are looking forward to going to some more this winter.

I can hardly believe that it is almost November.  Where has time gone?

Since we are only 2 months out from the wedding I thought I should do a check-up on my Wedding to-do list.

I am happy that we have done so much and I am just so anxious for December 31 to be here!  Matt and I will head down to Florida the week before our wedding to do some last minute stuff and get our marriage license - woop woop! :)
 
I am off to go get Matt and I's packets for the race....ahhh, wish us luck!  (we will need it!)

Yes, we are still alive!

I know it has been F.O.R.E.V.E.R since I have posted a blog...

I have been crazy busy at work and so that hasn't left me with much time to blog.  Also my camera has been on the fritz for so long and I do not like blogging without putting pictures up!  So there - those are my excuses.  And since I haven't blogged in so long, here is a post with many pictures!

This summer has flown by!  It started off with me heading to Denver for a conference - which went very well.  Then headed to my brother's cabin for the 4th of July.  July was a blur and then all of a sudden it was August.  I took a quick trip down to Florida to "surprise" my sister (my mom blew it!) and also to do some wedding stuff...try on my dress!!! ahh :)  We also celebrated my nephew's 3rd birthday!

 He is going to be such a lady's man!

The following weekend, Matt and I headed to Michigan for my brother's wedding...and to also celebrate a mile-stone birthday!  The Big 3-0!!

As you can see it has been a whirlwind of a summer and I can already tell this fall is going down the same path!  I am heading out of town this weekend for another conference and then up next weekend is my big race!  I will be competing in the ChesapeakeMan doing the SkipJack distance.  I am excited but terrified at the same time.  I promise to be back with updates after!  Wish me luck :)

I am off now to ride my bike home...yep, I have been bike commuting for a whole 2 days now and I love it!  SO CHEAP! :)

rodeo + recipe

Happy Tuesday!  I am so behind on this blog.  I really REALLY want to make a concentrated effort to be more diligent about blogging, I kinda miss it!

Sooo over the Fourth of July weekend I went up to my brother's cabin to hang out for the weekend.  We couldn't have asked for better temperatures.  We did a lot of hanging out, boating, wake boarding (SO FUN) and getting sun.  We also went to my first rodeo.  Sure, go ahead and make fun of me now.
 

It was quite the experience, not going to lie.  I think I had more fun watching those in the crowd than the actual show.  People from all different walks of life.  The guys who actually try to ride the bulls are out of their minds!  I don't know what makes you decide you want to do that for a living, um, no thanks!

Needless to say it was something I had never experienced before and I might be okay if I don't go to another one again!

It was a great time hanging out with my brother and his family and also acting silly with my niece and nephew - they are growing up so fast!



I cannot believe how big they are getting!

It was a fun weekend but I was ready to get home and get back in my routine.

So was Memphis...


We walked in the door to our apartment and he immediately put his head on his bed as if he were thinking "ahh, I am home!".

I have been trying to be adventurous with recipes and trying to vary up our typical weekly meals.  I usually make meatballs once a week because they are so easy and so yummy, but I wanted to mix it up so I decided to make lasagna with the meatballs.  As mentioned in my last post one of my favorite places as a kid, Noah's, had THE best lasagna ever.  They don't make your typically stacked lasagna but they do it in a casserole form - much easier to eat!

I attempted the infamous lasagna and I think I got pretty close to it!  I included all of the necessaries: meatballs, hard-boiled eggs, rigatoni noodles and I believe it was a pretty good replica.


Pretty sure I could eat this once a week!

Next time you make lasagna, you should definitely try it Calabrese style.

"Noah's" Calabrese Style Lasagna

- 8 meatballs (I used turkey meatballs) - chopped into bite-size
- 2 hard boiled eggs - coarsely chopped
- 1 can tomato sauce
- 6 cups cooked rigatoni noodles
- 1/2 cup ricotta cheese
- 2 cups mozzarella and Italians blend cheese

1. Pour cooked noodles into baking dish
2. In sauce pan, combine tomato sauce and meatballs until they are warm.
3. In a small bowl, combine ricotta and hard boiled eggs, add to tomato mixture.
4. Pour tomato mixture over noodles and mix evenly (it won't look pretty, but it will taste good!).
5. cover the mixture with the cheese mix
6. Bake at 350 degrees for 25-30 minutes or until warmed through out.

Side Note: I do not have the recipe on me right now, so I am hoping I didn't miss an ingredient.  If I did, I will update :)

On the running/triathlon front - things are going well!  I am getting in about 2 days of biking a week along with 2 days of swimming and 3 days of running.  This past weekend we had to skip our 12 mile run as I woke up with a strained hip flexor :(.  I am feeling better today and got to run for the first time in about 5 days, but I am making sure I take it easy as I have a couple of important events coming up soon...holy cow!

I know this was a bit of a random post, but I am just happy to be back posting again!
