Happy Tuesday! I am so behind on this blog. I really REALLY want to make a concentrated effort to be more diligent about blogging, I kinda miss it!
Sooo over the Fourth of July weekend I went up to my brother's cabin to hang out for the weekend. We couldn't have asked for better temperatures. We did a lot of hanging out, boating, wake boarding (SO FUN) and getting sun. We also went to my first rodeo. Sure, go ahead and make fun of me now.
It was quite the experience, not going to lie. I think I had more fun watching those in the crowd than the actual show. People from all different walks of life. The guys who actually try to ride the bulls are out of their minds! I don't know what makes you decide you want to do that for a living, um, no thanks!
Poor horsies - they look so tired!
These bulls were mad and definitely did not want anyone on their backs!
Needless to say it was something I had never experienced before and I might be okay if I don't go to another one again!
It was a great time hanging out with my brother and his family and also acting silly with my niece and nephew - they are growing up so fast!
I cannot believe how big they are getting!
It was a fun weekend but I was ready to get home and get back in my routine.
So was Memphis...
We walked in the door to our apartment and he immediately put his head on his bed as if he were thinking "ahh, I am home!".

I have been trying to be adventurous with recipes and trying to vary up our typical weekly meals. I usually make meatballs once a week because they are so easy and so yummy, but I wanted to mix it up so I decided to make lasagna with the meatballs. As mentioned in my last post one of my favorite places as a kid, Noah's, had THE best lasagna ever. They don't make your typically stacked lasagna but they do it in a casserole form - much easier to eat!
I attempted the infamous lasagna and I think I got pretty close to it! I included all of the necessaries: meatballs, hard-boiled eggs, rigatoni noodles and I believe it was a pretty good replica.
Pretty sure I could eat this once a week!
Next time you make lasagna, you should definitely try it Calabrese style.
"Noah's" Calabrese Style Lasagna
- 8 meatballs (I used turkey meatballs) - chopped into bite-size
- 2 hard boiled eggs - coarsely chopped
- 1 can tomato sauce
- 6 cups cooked rigatoni noodles
- 1/2 cup ricotta cheese
- 2 cups mozzarella and Italians blend cheese
1. Pour cooked noodles into baking dish
2. In sauce pan, combine tomato sauce and meatballs until they are warm.
3. In a small bowl, combine ricotta and hard boiled eggs, add to tomato mixture.
4. Pour tomato mixture over noodles and mix evenly (it won't look pretty, but it will taste good!).
5. cover the mixture with the cheese mix
6. Bake at 350 degrees for 25-30 minutes or until warmed through out.
Side Note: I do not have the recipe on me right now, so I am hoping I didn't miss an ingredient. If I did, I will update :)

On the running/triathlon front - things are going well! I am getting in about 2 days of biking a week along with 2 days of swimming and 3 days of running. This past weekend we had to skip our 12 mile run as I woke up with a strained hip flexor :(. I am feeling better today and got to run for the first time in about 5 days, but I am making sure I take it easy as I have a couple of important events coming up soon...holy cow!
I know this was a bit of a random post, but I am just happy to be back posting again!
